Red, White, & Blue Slaw Americana Recipe
Most of us like to serve patriotic food on the 4th of July and other patriotic holidays. Red, white, and blue food is perfect, of course, and the following coleslaw-like salad is just that – red, white, and blue. Since “blue corn” tortilla chips aren’t a deep blue, you need to use your imagination a little, but it’s worth it because this salad is delicious and different. No cabbage in this slaw – just red pepper (red), white jicama and cauliflower (white). Just before serving you stir in blue corn tortilla chips (blue). This salad is extra crunchy with vegetables and chips, but it is still good later when the chips have softened.

Slaw Americana is a good choice to take to a pot luck party or to serve with traditional Fourth of July foods at a backyard get-together or picnic. It’s a nice change from cabbage based slaw,

2 red bell peppers
3 cups jicama, cut into strips 2" long and as thin as possible
3 cups chopped cauliflower

Dressing:
1/2 cup sugar
1 teaspoon dry mustard
1 teaspoon salt
1/3 cup white wine vinegar
3 tablespoons finely chopped onions
3 tablespoons vegetable oil
1/2 cup mayonnaise

1 9 oz. package blue corn tortilla chips, crushed
  1. Core and seed the red peppers, and, using a very small star cutter, cut as many stars as possible (it's easiest to cut through from the inside of the pepper), and place in a sandwich bag in the refrigerator.
  2. Chop the scraps and place them in a patriotic (if possible) serving bowl; stir in the jicama and cauliflower.
  3. Pour the dressing over, cover with plastic wrap and refrigerate until chilled.
  4. Just before serving, stir in the crushed tortilla chips and garnish with the red pepper stars.
  5. Dressing: measure the ingredients into a bullet blender or regular blender; blend until the sugar is dissolved and the dressing is fairly thick.
